I would have put a Ranger 2950dx in there with expanded channels. Same power draw with 25-35 watts vs 6-12 watts. You will be talking into that uniden all day and night trying to contact someone in the middle of nowhere. Like you said you made a contact with Jamaica. That was lucky 6 watt cb skip. Odds if that in an emergency are next to none. Trust me. The ranger will skip cross country in certain conditions with a good vertical whip mostly in the late afternoon or early evening. And give around 15-20 mi range vs 2-10 mi with the uniden. Also a 2m/440 rig to get a hold of officials in a real emergency. Ham license needed. Its very cheap and easy to obtain. Just need to study a little.

Dan, I can't wait for the day that all internet and digital communication is available no matter how far out you are. I think it will be in about 20 years or so.
Of course, if you want, you can always turn everything off when there is no trouble. :)

For emergency comms I HIGHLY recommend getting a scanner too. If s**t's hitting the fan, knowing exactly want's happening may save your life. Uniden (the same company that made your CB) makes a line of scanners called Home Patrol. They can program themselves if you punch in a zip code or city/county location.

Very well put! I'm currently a ham radio operator and I've recently found myself getting back into CB! Don't get me wrong I LOVE Ham. My radios can pick up ES and public service and I can contact hams and public service in emergencies and i have weather radio. But the only problem with ham is you can't get ahold of people who aren't hams. And if you live in an area like mine, there's only a handful of hams within 30 miles. Your next resort would be truckers! 
One thing I am taking a look at is the delorme inreach  gps two way communication devise.  I do a lot of hiking in the Everglades and that thing could become pretty useful if I break a leg or get bitten by a snake. Also it is so small  you can carry it in your pocket. A cb is a great idea only the fact that you can hear the stories from the truckers while driving is worth the investment xD 
What kind of antenna are you using?
You should also spend the 30$ and get a Ham license. I have a cheap 35$ Baofeng radio that not only picks up the weather service, but cam also communicate directly with law enforcement directly in an emergency, or around the world. I keep the CB too because the ~27mhz band can be attenuated to go ultra long range and you can listen to the truckers, but with the Ham you have so many more options added on. Marine bands, aircraft bands, GMRS, FRS, whatever. In an a serious emergency you can reach almost any type of radio. Another thing I recommend is a subscriptionless satellite and radio locator and search and rescue insurance. If you're like me and actually like hiking in nature alone, it might save your life. Never want to have to cut your own arm off with a pocket knife.
Have you ever thought of getting a small cb unit for the drivers cabin?
Hey Dan, do you also have a GPS enabled PLB or EPIRB in case of emergency? I think that anyone going into such remote areas should have one, just to be safe.
wat scott you no like cb radio or what cb radio is ok you dont need lic to use.....

I have a CB in my truck....for backup communications, like you...I used to travel quite a bit, with my job, driving to different States, Towns, Cities etc. and sometimes driving late at night, I would chit-chat with Truckers out there, telling stories, and telling jokes etc, it really made the time go by fast, and the CB is really quite in the late night hours, not all that day time noise, that will drive you crazy sometimes....take care, and travel safe, Tim.
